Ingredients you’ll need:
– 1 cup gram flour (besan)
– 1 cup water
– Oil or ghee for frying
– A pinch of orange food color (optional)
– 1 cup sugar
– 1/2 cup water
– 1/2 teaspoon cardamom powder
– Chopped nuts (like almonds, cashews) for garnishing
– Edible silver leaves (varak) for decoration (optional)

Instructions:


1. Prepare the Batter:
– Mix gram flour with water to create a smooth batter. Add a pinch of food color if desired.
– Heat oil in a deep pan for frying.
– Hold a perforated ladle over the hot oil and pour a small amount of batter over it. The droplets will fall into the oil and form tiny pearls. Fry until they turn golden. Remove and drain excess oil on paper towels.

2. Make Sugar Syrup:
– In a separate pan, combine sugar and water to make a syrup. Boil until it reaches one-string consistency. Add cardamom powder.

3. Mix Pearls and Syrup:
– Add the fried pearls to the sugar syrup. Mix gently to coat the pearls with the syrup.

4. Shape the Laddus:
– Let the mixture cool slightly. Then, take small portions and shape them into laddus by gently pressing and rolling between your palms.

5. Garnish and Decorate:
– Press some chopped nuts onto the laddus while they’re still slightly warm.
– Optionally, decorate with edible silver leaves (varak) for a traditional touch.

6. Serve:
– Let the laddus cool and set completely before storing them in an airtight container.
