– 1/2 teaspoon garam masala (optional)
– Salt to taste
– Water (approximately 1/2 to 3/4 cup)
– Cooking oil or ghee for frying

**Instructions:**
1. In a mixing bowl, combine the besan (gram flour), chopped onions, tomatoes, green chilies, grated ginger, chopped coriander leaves, cumin seeds, turmeric powder, red chili powder (if using), garam masala (if using), and salt. Mix everything well to form a dry mixture.

2. Gradually add water to the dry mixture while stirring continuously. Keep adding water until you achieve a smooth batter with a pouring consistency. The batter should neither be too thick nor too thin.

3. Heat a non-stick or cast-iron skillet (tawa) over medium heat. Once the tawa is hot, pour a ladleful of the besan batter onto the center of the tawa.

4. Using the back of the ladle, spread the batter in a circular motion to form a thin pancake, similar to a crepe. Try to spread it evenly to ensure even cooking.

5. Drizzle a little oil or ghee around the edges of the chila and on the top surface. Let it cook for a couple of minutes until the bottom side turns golden brown and crisp.

6. Carefully flip the chila using a spatula and cook the other side. Add a bit more oil or ghee if needed. Cook until both sides are evenly golden brown and the chila is cooked through.

7. Remove the cooked Besan Chila from the tawa and place it on a plate. Repeat the process with the remaining batter to make more chilas.
